Recipe of the Month ~ Popcorn Panna Cotta

Popcorn Panna Cotta (serves 8)


Popcorn panna cotta


Panna cotta

50g pop corn,

600ml double cream,

400ml milk,

100g sugar,

4 gelatine leaf


-Pop the corn, pour the milk, cream and sugar on to it. Bring it up to the boil, and let it set for 20 minutes.

-Soak the gelatine leaves in cold water, when they soften up, squeeze all the water out of them and melt it down with a 100ml of the cream milk.

-Sieve the mix to get rid of the popcorn then add the melted gelatine to the bowl mix.

-Give it a good stir, and then pour the mix in to the serving pot

-Chill it for about 3 hours until set

Salted caramel sauce

200g caster sugar,

200ml double cream,

Sea salt

-Bring the cream up to the boil.

-make the caramel in a heavy based sauce pan. When you get the desired colour, pull the caramel off the heat, and slowly add the cream to it, while whisking. Add salt for taste.
