Bespoke five-course private dining menu paired with wines
Posted onWe were delighted to provide catering for the Pink Elephant Club ladies dinner, hosted at Leigh Court in Bristol.
The brief was to create a bespoke menu to match a specific collection of wines. This gave our chefs free rein to come up with some delicious dishes to pair with different types of wines and for different courses.
The Menu:
Starter
Roasted celeriac soup, hazelnut crumb
Fish course
Seared scallops, pea purée, crisp bacon, sauce vierge, pea shoots and truffle foam
Main course
Duo of lamb, braised shoulder & seared tornedos, served with fondant potato, wilted rainbow chard, tomato, basil & caper sauce
Cheese course
Twice-baked Double Gloucester soufflé, cheese & ale sauce, truffle oil
Dessert
Rum Baba, rum and raisin ice cream, spiced rum syrup
